Reviewed Bek's Lemon Meringue Tea Cakes

"They came out good and really cute, but the recipe was confusing. Did you use a mini muffin tin, or regular? Mine made 32, not 24. Did you mix the batter and coolwhip by hand? It was difficult, could you use a mixer? Did you leave the cakes in the tin until the very end? It seems like they would be very hard to get out of the tins. How much is 1 cup of egg whites? I used 6 eggs and that made 3/4 cup, which was about double of what I needed. 4 eggs would've been more than enough. Recipe was poorly written and very confusing.

"Second of all, I wasn't sure how to mix the coolwhip and the cake mix together. I wanted to use an electric mixer, but I was worried it would do something bad to the cool whip, so I just mixed it by hand, but it was pretty difficult to do.
Another thing was that it said to let the muffins cool and then remove them from the tins. So, like an idiot thats what I did,and I got them all pretty on my serving dish. Well you have to put them back into the oven after you put the meringue on, so I had to put them onto a cookie sheet. I was worried that if you left them in the tins until the very end they would be very difficult to get out of the tins. Im not sure, tell me what you think.

"These looked adorable and they tasted very good. I made them for a baby shower and they got rave reviews. They werent tangy and sour like they would be if you used lemon pie filling, but they were good. I have a couple issues with the recipe though, I was very confused. This is going to take me a few posts because I can only use 1000 characters. First of all, the recipe just says muffin tins, but I thought she used mini muffin tin, so thats what I used. It made 32 mini muffins for me, not 24.
