"Even non-soup eaters in the family loved this recipe! I did subsitute the ground turkey for store bought baked chicken, and taco seasoning instead of enchilada seasoning. The flavor was great with 2 tbsp Goya Adobo seasoning as mentioned in another review.I also added just a little frozen corn. I am making it again to take to work during the week. "
