"Really good and easy! I used 4 cups of stock--it was pretty chunky. I also used brown rice and jarred peppers instead of fresh--seemed to work quite well and I didn't have to chop! I didn't have a shallot, but a regular onion worked well--also used lemon juice because I forgot to buy a lime. I tossed in frozen chicken breasts and let them cook"

"Really good--I couldn't find fire roasted tomatoes so I just used regular diced tomatoes. Used a 28 oz can of crushed tomatoes instead of sauce and used italian seasoning insteand of herbs de provence. Very tasty!"
