You MUST put the milk in slowly. When you see MILK thicken, add a 1/3 milk at a time. I used 6 cups of milk before it got to liquid like. I have a FoodSaver and was able to freeze the remainder for a day I chose not to cook :0)

I purchased an iron skillet that was seasoned to company standards. I followed Emeril instructions, however, I seasoned with bacon fat and Emeril's Essence. Awesome! Just make sure you follow the rules of water and no soapy water for clean up.

This is an awesome recipe! I live in an area where ethnic food are pretty much nil so I didn't have Manchego, Panela, or Cotija cheese. I substituted with Mexican Blend Cheese, Queso Fresco, and Feta cheese. It came out awesome.

Loved the spice, the butter tames it just a bit. The portion of the sauce is just a bit too much. I made some shrimp without bacon to avoid to much of a greasy taste and make it just a tad lower cal intake.
