Reviewed Smoked Sausage and Black-Eyed Peas

Jan 1, 2013 in Food Network Community Toolbox on FoodNetwork.com

This is an exceptional dish, very tasty. I already love black eyed peas, but this took them to a whole new level. I did not soak the peas, but they were perfect after about two hours of cook time. I used a nitrate free smoked Italian chicken sausage from Vons - which had nice flavor though I'm sure the regular pork kind would be better. Also, stir"

Reviewed Pot Roast with Vegetables

Dec 6, 2012 in Food Network Community Toolbox on FoodNetwork.com

I have made many pot roasts over the years and this was definitely the best. I think it was the crushed tomatoes that made the difference - they gave a delicious layer of flavor to the meat and veggies. Absolutely fantastic served over Giada's parmesan smashed potatoes. I braised a 3.5lb chuck roast for 4.5 hours, and I would have let it go longer"

Reviewed Pumpkin Chocolate Chip Cookies

Nov 5, 2012 in Food Network Community Toolbox on FoodNetwork.com

These cookies were very good. I made exactly as the recipe is written and the pumpkin / chocolate combo is delicious. The recipe makes A LOT of cookies, which was good as I they were for a school bake sale. They were so good that I had a hard time not eating them beforehand! I just bought the pumpkin and chips again to make some for family this we"

Reviewed Barbecued Mahi Mahi with Yellow Pepper-Cilantro Pesto

Sep 9, 2012 in Food Network Community Toolbox on FoodNetwork.com

The pesto was incredible, I couldn't stop eating it while the fish was cooking! Was happy to have some leftover to freeze for another time. Thought the rub was pretty good too, but the pesto was the real winner. Served it over mixed greens tossed with a little lemon juice and olive oil and brown rice. Yum, can't wait to have it again. "

Reviewed Penne with Arugula and Walnut Pesto

Aug 14, 2012 in Food Network Community Toolbox on FoodNetwork.com

This was very good and easy to prepare. It makes A LOT of pesto, next time I will not add the sauce all at once as the recipe suggests as it was too much for the amount of pasta. I also topped mine with thinly sliced grilled chicken breast which I would definitely do again. The green beans are fantastic, don't skip them. Yum!"

Reviewed Turkey Tacos Picadillo

Aug 9, 2012 in Food Network Community Toolbox on FoodNetwork.com

This taco was tasty. It was probably the best taco I ever had. I liked it so much, it made me smile: A direct quote as dictated by my seven year old daughter.

Fantastic tacos! Left out the jalapeno, used a 1.25lb pack of ground turkey and whole can of fire roasted tomatoes, and did not fry the tortillas. Delicious, can't wait to...

Reviewed Curried Chicken and Rice Soup

Mar 17, 2012 in Food Network Community Toolbox on FoodNetwork.com

Wow, this was fantastic! I had doubts because of the ingredients and the simplicity of the recipe but it was REALLY good. The dill, mint and lemon completely make it, don't leave those out. As other reviewers suggested I doubled the curry and added more carrots. This was so good, I can't wait to make it again!""

Wow, this was fantastic! I had doubts because of the ingredients and the simplicity of the recipe but it was REALLY good. The dill, mint and lemon completely make it, don't leave those out. Only thing I would change next time would be to make more. ""

Reviewed Veal Meatball and Broccoli Rabe Stoup

Mar 17, 2012 in Food Network Community Toolbox on FoodNetwork.com

Yum, great hearty soup! Used chard instead of rabe and lean ground beef instead of veal because neither Vons nor Whole Foods had them. I even forgot to put the sage in the meatballs and it was still fantastic! Glad I made a double batch for leftovers. ""

Reviewed Low-Fat Clam Chowder

Jan 3, 2012 in Food Network Community Toolbox on FoodNetwork.com

Really delicious and easy. Could not find fresh clams so used canned and it was still fantastic. To make up for the clam 'stock' I used bottled clam juice. I agree with another reviewer that the bacon adds a nice smokiness and should not be left out. I did, however, skip the butter and it was not missed. I would recommend adding a few more potato...

Reviewed Lemon Chicken Breasts

Nov 28, 2011 in Food Network Community Toolbox on FoodNetwork.com

Fantastic, easy dish. The whole family loved it and went back for seconds and thirds! My husband said many times that this was going into rotation. Definitely serve with rice or crusty bread to soak up the sauce. Used skinless breasts, was very moist and juicy. ""

Reviewed Chicken, Sausage, and White Bean Stew

Nov 8, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was an excellent dish. I gave it 4 out of 5 stars because it was a little salty. Aside from that the flavors were amazing, and it was very easy to make. I used two breasts instead of dark meat and canned instead of dried beans. If you make according to the recipe it would take about 3 hours start to finish. The rice is a must. ""

Reviewed Oven Roasted Chile Relleno with Chipotle Asado Sauce

Oct 10, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is a very tasty dish. They are not easy or quick, and there was even a point when I thought I would have to throw them out - my filling did not set up in the allotted amount cooking time, I upped the oven temp to 400 and cooked an additional 20 minutes. This may have happened because I used too much liquid when preparing the quinoa and it wa...

Reviewed Turkey Meatloaf with Feta and Sun-Dried Tomatoes

Sep 25, 2011 in Food Network Community Toolbox on FoodNetwork.com

Wow, this was the BEST meatloaf I have ever had! I made it exactly as written with the exception of cutting back on the salt (which was not at all missed because the feta is salty). My husband was skeptical when he saw the ingredients, but went back for thirds! This is now my standard meatloaf recipe. ""

Reviewed Fish Tacos

Sep 18, 2011 in Food Network Community Toolbox on FoodNetwork.com

I thought these were just okay, which surprised me in light of all the glowing reviews. I guess my expectations were too high. I used paprika instead of pimenton, but otherwise followed the recipe exactly. Too bad they were sort of bland and lacked flavor. ""

Reviewed Bell Pepper Slaw

Aug 19, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was very good if you like a less creamy, more vinegar flavored slaw. I used pre-cut packaged cabbage that was thinly shredded and followed the recipe otherwise. The peppers should be cut very thin, otherwise the texture overpowers the rest. I did not give it 5 starts because it was a little too 'wet' with a big pool of dressing at the bottom...

Reviewed Peach Cobbler

Aug 8, 2011 in Food Network Community Toolbox on FoodNetwork.com

Wow, this was amazingly good! I did cut back on the sugar in the batter (by about a third), which was not at all missed. Next time I will use less sugar with the peaches as well, cut out a few T of butter, and add more fruit. But, really, you cannot go wrong with this dessert. My dinner guests were in states of cobbler a la mode euphoria, lots of...

Reviewed Buttermilk Baked Chicken

Aug 8, 2011 in Food Network Community Toolbox on FoodNetwork.com

While very tasty, I had problems with this recipe. The bottom of the chicken was soggy and the crust did not brown - even though I baked on a rack as directed. I had to crisp up the pieces in a skillet to make them serve-able, and then much of the crust came off. That said, when I finally got them to the table they were delicious, with many round...

Reviewed Chicken Enchiladas

Aug 1, 2011 in Food Network Community Toolbox on FoodNetwork.com

These were fantastic. They are not difficult to prepare, but do take some time. I followed the recipe and did not use a rotisserie chicken (they are too salty for me), and cooking the breasts in a skillet worked out perfectly, very juicy and tender meat. My husband said these are the BEST enchiladas he has ever had! That is impressive as I have ma"

If you are looking for a delicious dessert with a beautiful presentation this is IT! I cannot tell you how good this is, you just have to try it. This is a fantastic dish. I have been making it weekly for a few months because I crave it! True what an earlier post said about it not really filling a 'large' skillet and needing more. I make my own sauce ahead of time and freeze in batches which makes prep very easy for this (Giada's marinara is amazing). Also, the more veggies the better, I al"
