These are sooo good! I usually avoid frying but I used light mayo and a little less than suggested and olive oil for the frying (also probably a little less than suggested. I plugged this into my fitnesspal and was happy to see that it was only about 350 calories for two salmon cakes. Will be adding this to my regular rotation!"

As others mentioned, it definitely takes more than 20 minutes (closer to an hour)and isn't the easiest after-work meal to make since it requires so many different pots and pans and cleanup isn't the quickest. Yum..bacon does make everything taste better! There was no haddock available at my city grocery so I just used a tilapia fillet. The flavors were still delicous...definitely will make this one again - and hopefully using haddock!
