Loved these as an alternative to crusty bread with Melissa's weekday cassoulet or any stew! Great texture, but lacked some flavor. To keep the butter from burning (after reading the reviews), I sprayed my large muffin cups, heated them, wiped out the browned spray and dropped in some room temp butter, which melted instantly--then filled the cups....

Too much thyme for our liking. I will probably use 1T Cajun seasoning and 1 tsp dried thyme or 2 tsp fresh. Otherwise, this was delicious! I served it over grits and garnished w/ chopped scallions. It was a match made in heaven.

I halved the recipe, but made all the gravy and it was delicious. I omitted the apple and cinnamon, and added a few pinches of ground fennel to the meatballs and to the gravy.
