"My grocery store has a bulk item section. The ingredients were very economical...prunes $.23 and almonds $.44. If you use alot of Claire's recipes she almost always uses infused olive oil. If it is not available in your store or too expensive...make it. We love goat cheese and usually always have some in the fridge. I too let the chops simmer in chicken broth.
