A definite crowd pleaser!! I have made this for quite a few picnics and office potlucks and it is always a hit. I always make it the night before to allow it to sit in the fridge overnight. Absolutely delicious! I haven't tried her couscous recipe but typically make the meatballs and serve them over plain couscous with lemon juice and fresh flat leaf parsley.

I haven't tried this recipe yet but it looks pretty tasty & simple! In response to the beer question--you should be able to easily substitute another type of beer. I would go for something light in flavor (budweiser, etc.) since mexican beers are typically pretty light.
