Reviewed Lemony Shrimp and Risotto

Jan 5, 2014 on

Not a fan of rice or risotto but I do try some recipes from time to time. This seems to be the most flavourful one I have ever tried. As other reviewers suggested, don't add all lemon juice at once. Add gradually as per your taste!

I cut the sugar in half. This would make a great pie filling. Love the combination with the blackberries. Better served 10 min after removed from fridge as the consistency is more mousse-like

Reviewed Mexican Chicken Soup

Dec 3, 2013 on

Good one but not the best. I prefer Rachel Ray's mexican soup to this one. Something about the celery in it makes it more ordinary for me. Must serve with crushed tortilla chips. Tried it without and it is really not the same.

Reviewed Sweet Pepper Crostini

A more subtle taste crostini but still very good. Used the hard mozzarella. Must try with fresh! Roasted my red bell pepper under the broiler.
Made some crostini alla romana and some italian egg sandwich (both giada recipes) and served them as breakfast!

Very very good! Coconut sauce would work on other salads too. Tried it on tacos and loved it. (makes a lot more sauce than needed)

Cucumbers complement the salmon very well. I used half vinegar half water as my hubby does not like pickles. He ate them all!!!

Nov 6, 2013 on

Did not find pickled lemon so i boiled one in one cup of water + 1 tbs of salt. The remove the pulp and sliced the rind.
Be careful with the salt as after adding the salt pickled lemon and the already salted olives it became too salty. But taste is fantastic. I did not like the couscous tough.

Delicious! Made the Restaurant-Style Salsa Recipe from food network. Great next days if meat is heated by steaming it in the microwave in the salsa. Made pickled onions to serve with it as i just love them in my tacos/fajitas.

Very good! Cocoa whipped cream is a must for this dessert. Next time will try using less gelatin as I thought the texture of the panacotta was a bit too stiff! but overall great dessert!

As per user "You'll Eat It and Like It" suggestions, I added 1/4 CUP of instant coffee and added the egg whites beaten to stiff peaks. Made a quick sponge cake for the bottom of the mousse bowls.
Did not have mascarpone cheese so made an orange Chantilly cream with a splash of Disarono Amaretto.

Substituted the spinach with some zuchini, used ham instead of canadian bacon but baked 2 eggs. in a ramekin which led to having raw whites and not so runny egg yolks. Next time should take the advice and bake each egg in a different ramekin. I used more spices /seasoning than required but I still think it could use some more seasoning. Overall a "

The brodetto by itself is horribly sour but seems to work well under the fish. I did like the pea pure but I would not put the fish on top of it while serving, the pea pure is already "dissolving" into the brodetto without the added pressure of the fish on top of it. Overall a good balanced meal!"
