Reviewed pumpkin and goat cheese risotto

Simply delicious, could be bland however when you pair it with the goat cheese and bacon it's out of this world. Roasted and pureed a sugar pumpkin. Gave it to my one year old with extra pumpkin puree and without the goat cheese and bacon and she loved it. This is surely being added into the recipe rotation.

Made this for a family holiday party. Very good on a cold winter night. Next time i'd reduce the amount of olive oil and felt i had to simmer a tad longer to reduce the liquid. Very good with a smear of goat cheese on a crusty baguette!""

Easy and Delicious...almost like a Chili. Used black beans (what was on handand added two cups of chicken broth). Cooked 6 hours in the crockpot and then let sit in the fridge over night to let the flavors marinate. Great with crushed corn chips & cheddar."
