I made this as per the recipe, but cut the mayonnaise to 1 Tblsp and used EVOO instead of vegetable oil to make it even more healthy. I'm sure the dressing was different, but so good. I added a little chopped up red bell pepper because I had it. Didn't miss the extra mayonnaise at all. I will definitely be making this all summer. I may even t"

OMG. This is wonderful! Made it exactly by the recipe and wouldn't change a thing. I think it would make a great soup if you pureed part of the vegetables after cooking and added just a bit of chicken broth. I may try that with the leftovers. "
