Reviewed Butterflied Cornish Hens with Sage Butter

"This recipe is amazing and very quick and easy. I could not find fresh cornish hens anywhere in my neighborhood; I went to three different grocery stores. So, I substituted the hens for bone in chicken breast - delicous! To help eliminate some of the smokiness from the butter that others had described, I transfered the chicken to a different baking dish before putting in the oven. Even with the transfer of dishes, I still managed to set my smoke alarm off for a brief period. However, the recipe was full of flavor and absolutely amazing. After baking for around 35 minutes, to 170 degrees internal temp, the chicken was moist with a crispy, very flavorful, crust. Sunny is fantastic!
