I used 1 cup half and half and one cup skim milk, thickened with a bit of flour to substitute the HEAVY CREAM. Also used a reduced fat blend of mozzarella/provolone instead of gruyere, and olive oil instead of butter for the topping. Believe me, this was just as good as the original but cut hundreds of calories out of the dish!
