I love this soup! I have made it a couple of times, and it's very adaptable. I threw in some chicken and spinach this time, and I've done zucchini, too. I also like adding some red pepper flakes, and I always add extra garlic and a little salt. Freezes well, too. Yummy!

YUMMY! I used regular lemons and cut back on both the rosemary and chili flakes. I was worried it would be overpowering, but next time I'll make it as written. I only marinated it for a couple of hours, next time I'll do overnight. The flavors are delicious, enjoyed by 3 generations of our family.

I was put off at first (hamburger soup?), but this is delicious! I made 1/2, which is perfect for a pkg of organic ground beef from Costco. 3 of us for dinner, plus leftovers. Absolutely delicious! My new favorite butternut squash soup. Followed the recipe exactly and it was GREAT. Hearty like a bisque with just enough spice to make it really interesting. Had leftover tonight with a dollop of plain sour cream and chopped cilantro. We love it and will make it a regular!

What potato soup is supposed to taste like! Just enough richness with the heavy cream. Immersion blender worked perfectly. I might throw some chives on top next time.

Very, very good. I took the advice of another reviewer and made extra sauce, glad I did. I'm looking forward to the leftovers. I think it would be great with thigh meat, too. Delish!
