Just made a batch of this salsa and it is fantastic! I have an aversion to cilantro, so I substituted ground coriander instead. Just remember to process in two or more batches or you will have a puddle of tomato juice oozing from your food processor!! "

I watched this episode on Friday and made it for supper on Saturday! These were super easy to make and they could be customized to include different veggies/meats/etc. I did find that the eggs were a little bit underdone after the 2nd cooking and cooked for an additional 5 minutes without the foil to brown the tops.
