I will say this. It should be forbidden not to brine your thanksgiving turkey. The amount of moisture in a brined turkey is incomparable. Even days later. With a bit of competence and knowledge of cooking, this recipe is perfect as is. Even the 500 degrees for 30 min. Is perfectly ok. At least the last 3-4 years of using this recipe. Always perfec"
