Reviewed Pecan Brownies

"Ok, I’m a self-declared idiot when it comes to cooking and I lack the common sense most cooks would have, but even I didn’t think to cook the eggs on the stove as another review indicates! Incidentally, the first time I made the batter, I added the sugar on the stove while the heat was on very low to keep the butter melted because it was cold in the kitchen and I could see the butter getting solid again, but I mixed everything else in a mixing bowl. I don’t even like brownies and I made this for my husband, but I eat a piece here and there, and he usually finishes the whole thing gradually, or takes it into the office and comes back with everyone’s praises for my great baking skills. If only they knew how bad I really am! This recipe is great for people who are not experts. As someone else mentioned, you can always adjust the ingredients to taste and, for example, use less sugar. I personally use less chocolate than indicated so they don’t come out too dense.

Reviewed Salmon with Lentils

"I have to be honest, I was surprised how good the lentils tasted. I am a lentil fan and I have had it in a variety of ways since I was a child. But I found the taste amazing. I tweaked it to my liking and I think one should always season to taste as people have varying tastes, but the combination of leeks, carrots and lentils just works. I have used the lentils as a side dish for other recipes I like and I find that people always eat the whole thing and really seem to enjoy it. My husband especially is a fan and sometimes asks me to just make the lentils for dinner. He is a much better cook than I am and cooks way more often, but he always asks me for this one.

Reviewed North African Inspired Rub for Fish and Chicken

"This is a fantastic rub. I have only tried it on salmon, but we have not had salmon at home without this rub since I discovered it. It creates a really nice crust and gives a ton of flavor to the salmon without having to add anything unhealthy. I use olive oil and I feel it enhances the taste. I make plenty of rub and store it in my spice rack, because people, including my mom and my mother-in-law, end up taking home my supply after tasting the dish! One word of caution to those cooking indoor without a strong fan: if you use too thick a layer of the rub, there will be a lot of smoke. You can solve the problem by either using less (which is what I do and I still get a nice crust) or putting a lid on the grilling pan, but that tends to make the crust a bit soggy.

Reviewed Lemon Risotto

"This is one of those recipes that everyone should have as it quickly becomes a routine side dish to make with many main dishes, but especially fish. I routinely make it along with grilled salmon and I don't change anything about the recipe (except I sometimes make it without the wine, depending on whom I'm serving). People simply LOVE this dish. Even my father had second and third helpings and he never does that. I now know the recipe by heart having made the dish so often. I have never had any left-over, except when I made it just for myself and couldn't finish four servings alone! It is best when it is right out of the pan and still hot, but even as leftover, I personally enjoyed the taste.

Reviewed Queen Korina's Salad

"I saw this recipe on an episode of Guy's Big Bite and ran to the store to buy the ingredients and made it that night. My husband simply loved it. I later made it for an office party and people seemed to really enjoy it. I found it to be extremely easy to make and the dish tastes great. Additionally, you can keep the leftovers in the fridge and serve it over fresh salad the next day or wrap it in a tortilla and it is great as a wrap as well. I have never used the broth for anything else, mainly due to a lack of time, but it tastes very good and makes great beef stock. I’m not sure why people think it’s boring or tastes like “cold pot roast.” Mine was seasoned very differently. I used less oil in the dressing as suggested, and I think people should make modifications as necessary as people’s tastes are different. But as a dish, this is one of the returning champs on our menu!
