Really good sauce recipe. I used a jar of roasted red peppers and it helped with time and energy. I also used an immersion blender to puree the sauce in the pan. I think that transferring it to a blender or food processor would have made a huge mess. Stacking the fried eggplant with sauce and cheese and then baking, takes away from the crunch "

Perfect way to showcase summer tomatoes. My friend gave me a bunch of tomatoes from her garden and I made this recipe. It was so good! My husband isn't a huge fan of fennel, but he loved this recipe. Ina mentioned also using fresh squeezed OJ instead of the lemon. I tried that too, and it was so good. "
