Reviewed Good Eats Roast Turkey

"This is my first thanksgiving turkey I'm doing all by myself and I reeeally want to impress my boyfriend with it. The thing is, after about 15 minutes in the oven at 500, the turkey was smoking heavily. After 20 minutes I reduced to 350 early because the bird didn't seem to be getting crispy anyway. Now most of the smoke is gone. I don't know what I did wrong, but I didn't use Canola oil because I didn't have it; instead I used something called Saffola. It says on the bottle it's just like canola but healthier; but could that be the cause of the smoke?
I haven't tasted the bird yet but I think it will be good because the brine and aromatics made it smell AH-mazing.
