Reviewed curried chicken and rice soup

3 days ago on

Really, really good! I used about 2 cups of vegetable broth with the chicken. And about a teaspoon of dried dill instead of the fresh. I would have never though pureeing cooked rice to make something creamy! It turned out so well and the lemon juice at the end really adds something. Taking other reviewers' suggestions, I added a cup of frozen peas...

Reviewed turkey, kale and oat meatballs with quick tomato sauce

Dec 4, 2014 on

This, oddly enough, took more time than I thought it would. Once you mix the kale into the turkey (I used chicken instead) it looks like you've ruined it, but those delicate kale-meat balls do cook up nicely. They're not as dense as a regular all meat meatball though. There is a lot of flavor, especially when topped with some more Parmesan. The only...

Reviewed penne with shrimp and herbed cream sauce

Oct 23, 2014 on

This was really tasty, but my sauce never thickened up (maybe because I used half and half instead of whipping cream?) Anyway, so I made a slurry with flour and mixed that in and let it simmer for another 10 minutes. That finally thickened it up. I also used about a tablespoon of fresh thyme instead of the basil, since that's what I had on hand. With...

Reviewed guy's kickin' quesadilla

There's a lot going on with these - so many veggies compared to the cheese. They are also huge. Didn't have broccoli, but there was so many other things, that I'm not sure it would have fit even if I did have it.

Wow, this is incredible. So full of flavor (and I even forgot the basil). Served with mashed yukon gold potatoes. I savored every bite.

Yum! Great Mediterranean-style side dish! I used couscous instead of bulgur and it turned out great.

Reviewed Skillet Eggs With Squash

Oct 23, 2012 in Food Network Community Toolbox on

This is really good, easy to make and delicious. (Use your food processor to shred the squash to save a bunch of time. I used 3 summer squash and 3 zucchini and only four eggs (to serve 4 people. Although, despite it being very good, there is no way this would ever serve 6 people, it was even a little light for 4 people. "

Reviewed Slow-Cooked Ham and Beans

Oct 3, 2011 in Food Network Community Toolbox on

Pretty good and the flavors are even better the next day. Used a 3 lb. bone-in picnic ham and it was still plenty for 4 servings and the leftovers. Only cooked for about 6 hours, but everything was still nice and tender.""

Reviewed Tilapia with Green Beans

Jan 26, 2011 in Food Network Community Toolbox on

Used dried oregano instead of fresh. Probably would use dried parsley next time too. My green beans were not thin and took longer to cook meaning my tomatoes broke way down so I almost had a tomato sauce. Served with brown rice so the tomato sauce was nice to drizzle over it. Definitely will consider making again!
