"Just made this tonight! Thanks Facebook/Food Network!!! It was great! Didn't have a cheese pumpkin (have grown them before though), but I did have a piece of crookneck already in the fridge(ancestor of butternut but sweeter- similar to cheese pumpkin in taste). I ended up over roasting the squash a little bit, but it ended up breaking down somewhat, making a lovely coating sauce. Also I could not find pepitos/pumpkin seeds at the grocery store so I toasted pignoli (pine nuts) instead. It was AWESOME! I will definitely make this again!!!!
