"What I did was peeled the eggplant, sliced thick, roasted in the oven along with a red bell pepper and a large onion, halved. Took it out and coarsly chopped it (no processor). Then I combined the rest of the ingredients, less salt. It was great! Thanks Ina!"

"This is a good 'base' recipe for granola. I used dried cherries instead of cranberries. I also added Fiber One cereal (for some fiber),and some chopped walnuts. As Granola is high in calories, I use about 1/4c over greek yogurt for breakfast. It's delicious. Thanks Giada.""

"Giada, you've outdone yourself. This salad was incredible! And the brussels sprout is the key. Being lazy, I used the microwave to 'cook' the sprout leaves. 60 seconds and right into an ice bath to stop the cooking. Then I used a salad spinner to dry the leaves. I did this the day before. It was the hit of the BBQ. Thanks you!"
