Reviewed Roasted Eggplant Caponata

Aug 19, 2012 in Food Network Community Toolbox on FoodNetwork.com

What I did was peeled the eggplant, sliced thick, roasted in the oven along with a red bell pepper and a large onion, halved. Took it out and coarsly chopped it (no processor). Then I combined the rest of the ingredients, less salt. It was great! Thanks Ina!"

So easy, so delicious! I actually mixed Raspberries, blackberries & blueberries together. Turned out great. I'm really loving this show & hope Food Network renew. Ree is a breath of fresh air without all the fanfare.""

Made this Recipe today and it was yummy. I wanted to add more protein so I added shrimp. It's a very colorful dish and perfect for a crowd. Didn't make the tuna yet, but will soon.""

Reviewed Homemade Cranberry Nut Granola

Aug 9, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is a good 'base' recipe for granola. I used dried cherries instead of cranberries. I also added Fiber One cereal (for some fiber),and some chopped walnuts. As Granola is high in calories, I use about 1/4c over greek yogurt for breakfast. It's delicious. Thanks Giada.""

Reviewed Cherry Tomato and Chile Gazpacho

Aug 8, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was an easy gazpacho recipe. I used red wine vinegar in place of the apple cider and added some tomato juice. I also topped the soup with chopped shrimp & cucumbers. I skipped the croutons. It was delicious. Thanks Giada""

Reviewed Salmon and Sweet Potato Cakes with Agrodolce Relish and Arugula

Jul 16, 2011 in Food Network Community Toolbox on FoodNetwork.com

What a great recipe. As my husband is not a fan of sweet potato, I used yukon potato in it's place. Still fantastic. Next time, I might mix half panko and half bread crumbs."

Reviewed Brussels Sprout-Leaf Salad

Jul 10, 2011 in Food Network Community Toolbox on FoodNetwork.com

Giada, you've outdone yourself. This salad was incredible! And the brussels sprout is the key. Being lazy, I used the microwave to 'cook' the sprout leaves. 60 seconds and right into an ice bath to stop the cooking. Then I used a salad spinner to dry the leaves. I did this the day before. It was the hit of the BBQ. Thanks you!"

Reviewed Tuna and Hummus Sandwiches

Jul 10, 2011 in Food Network Community Toolbox on FoodNetwork.com

This recipe was delicious! I didn't have cornichons so I sub capers instead. Used less salt and 'cheated' with store bought hummus. I put the hummus & tuna mixture in individual bowls, lined the platter with the toasted sourdough bread & had the guests spread their own toast. It worked out great as an appetizer. A real hit. Don't use the tun"

Reviewed Ten-Minute Blackberry Cream Pie

Jun 5, 2011 in Food Network Community Toolbox on FoodNetwork.com

I actually did this recipe upside down. I mixed the berries (whole) with blackberry preserve, put it in individual dishes, then topped with crumbled graham cracker crumbs (mixed with some melted butter)and added a dollop of whipped cream."

My mouth was totally watering watching this recipe. I'll probably substitute ground turkey for the veal. That'll be the only difference. Can't wait!

Reviewed Scallion and Mozzarella Cornbread

Jan 31, 2011 in Food Network Community Toolbox on FoodNetwork.com

Amazing what that box of cornbread mix can do. Didn't have mozzarella so I sub with sharp cheddar. It was delicious! I agree with the other post, Jalepeno would definitely be a good addition.

Reviewed Squash Caponata

Jan 9, 2011 in Food Network Community Toolbox on FoodNetwork.com

I'm rating this recipe 5 stars because I followed Alex's recipe from 'the show' instead of what's written for us here. And everyone's right, the butternut squash was deleted in the recipe and the directions were confusing. I did make this dish and it's delicious. I hope somebody will revise the recipe
