Just made these this morning and I think they are great. Learned that I need to follow Alton's instructions and let them cool at least 5 minutes before taking them out of the ramekins. Just tried this recipe and think it has a lot of potential for variations. I would have given it five stars but thought some things needed tweaking. Really great use of zucchini. I also made it my own by modifying the fat content. I replaced stuffing with two slices of wheat toast crumbs, low-fat sour cream, and reduced fat cheese.
