Thanks Guy! Wonderful stock to prepare the night before roasting your turkey! Followed recipe exactly except I used two turkey thighs(cheaper) and the neck and giblets from my turkey. For the gravy though, I separated the fat from my drippings(from my brined ,thanks Alex ,turkey), used it, along with Wondra flour for the roux, then added the stock...

Alex, thank you, thank you, thank you!!! I will never roast a turkey again without your brine!! The breast meat was sooooooooo tender, it was unbelievable! Wasn't salty at all(I think due to rinsing thoroughly before roasting, which Alex didn't do). Even the drippings were rich and delicious for making gravy! Highly recommend this recipe!
