As a tribute to the Neely's I par boiled the sweet potatoes and let them rest. Cut them into thick rounds and took the skins off. Drizzled olive oil on them and took to the smoker for about 20 min. Now we are taking right? Added some chipotle powder to the wet mix and now this is a true Smokey Sweet Potato Salad. Thanks Neely's........"

I love winter squash and thought I have had them every way. WOW, not this way. It was GREAT! I used ramicans so every one had there own pretty portion. Super easy to do and tastes so great with a pesto, I used my own sage pesto. I this it would work with any pesto including a tomatoe pesto. Thanks Giada, You All Must Try This One Out.
