Like most of Ina's creations, this one is awesome as well. I cut back on the rind of the orange ( deleted it actually), stayed with the OJ (with pulp) and cut the white sugar in the apples from 1/2 to 1/3 Cup and in the topping from 3/4 to 1/2 cup and it was plenty sweet even with tart apples. Made the cake as designed once. Made reduction adjustments to the coconut ( 1 cup, chopped a half of a cup of maraschino cherries and added to the batter, and used marscapone cheese in lieu of cream cheese and I liked it a bit better. If made as designed or modified as described here, this is a winner. May want to try pistachios instead of toaste...

This "frosting" deserves a better name. Made it many times varying the cocoa and espresso amounts and strength types. I could not find a better combo. Is spreads well, pipes wonderfully and creates a picture when finished far beyond its ease of preparation. AWESOME"
