Reviewed Mini Baked Potatoes with Mascarpone and Prosciutto Bits

Definitely a keeper. I tried 30 minutes standard baking using the salt method and my potatoes weren't ready for an additional 10 minutes which threw my timing on other things off. The next day I made them again and I tried 350F convection and instead of a salt bed I tossed with olive oil and forked them. They were done in 30 minutes using that "
