"I've been making this for several years ever since Ina did it on her show. Everyone loves it...everyone. I play with it...minced garlic, sliced shallots, flavored olive oils, a little "Slap yo Mamma", etc. In a pinch for time, I'll slice them and microwave them for maybe a minute or so...then pop them in a toaster oven and they're done if minutes. "

"I dislike jargon. Just in case "pelati tomatoes" is unfamiliar to you or even intimidating...it just means peeled, canned tomatoes. My brand of choice since they are everywhere and excellent quality is San Marzano...but to tell the truth, in a pinch I'll happily use S&W diced tomatoes avail. from Costco in the handy 12 pack. I always have them on ""

"A couple of things for beginners...peel the peaches. Use Amaretto and Turinado sugar to sprinkle on top. Use fresh peaches...period. Dishes like this were "invented" to take advantage of in season fruit. Make apple pie when peaches are not in season. Or not! Use buttermilk, period. You can not "sour" pastuerized milk with anything. You can make it"
