Sorry Elton, but look at the sugar content almost 2 cups of combined sugars to 2 and 1/2 cups of flower! I think you can cut down on the sugar to 3/4 of a cup combined sugars by adding a cup of raisins which would provide sweetness. I love carrot cake but for a "light" carrot cake it sure is very heavy on the sugars. To much for my taste. I do not have a weight problem, but so much sugar is not healthy and is unnecessary. Thank you, "
