Very tasty recipe for gazpacho. The texture is fantastic and the flavoring is almost perfect. I used low sodium vegetable juice the second time making this. Delicious. One addition: fresh parsley. The parsley adds a freshness I felt was missing. Will probably end up making this every week. It is THAT good!"
