Reviewed Roasted Tomato Basil Soup

I've made this soup twice and loved it both times. When I made it last night, I added some ricotta cheese to the soup to make it thicker and creamier and to add some protien. The ricotta might seem unusual, but it was a nice addition. Next time, I'd like to make some cheesy croutons to go with it too. "
