Made this for my family. I only pan fried the eggplant with olive oil instead of deep fry. I also only had 2 layers of eggplant because I had to take the pan and travel an hour to my sisters so I didn't want it to be all over the car! I had enough to make a 1/2 pan to leave at home. Everyone loved it. Can't wait to make this again.

Easy to make, not a lot of ingredients. I used beef stock because I had an open one in the frig. Served it over fettuccine. My husband devoured 2 plates. I did add 2 cloves of garlic after I added the Marsala. Only used 2 tbsp of butter, 1 to coat pasta 1 to the sauce. Added the chicken breasts back to the pan with sauce.
