This recipe just plain rocks. Not much more to say. Served it on a bed of Israeli couscous with a red lettuce/blue cheese/avocado (really good avocado!) salad and it was amazing. And the skin was crispy and a tasty treat at the end."

Excellent recipe, one of the best for this dish I have had. I used olive oil only for cooking the chicken, added butter for the mushrooms and used the butter at the end to thicken the sauce.
