"Remove membrane and add a rub:
If the steak has a membrane covering one (or both?) side(s), remove with a sharp knife!
Add a rub to the steak before cooking:
1 tsp. fresh thyme (scrape with leaves off the stem and chop)
1/4 tsp. pepper
1/8 tsp. salt
Cut steak it into 4 oz. serving pieces so it can be cooked to the preferred doneness of the eater"
