"So delicious and easy to make though I always stumble for this reason. Do I add 4 TBLS. of the Dill/Mayo mix to the burger mix and reserve the other 4 TBLS. for the spread on top sauce? 1/2 cup of mayo is equal to 8 TBLS. Oh and I add a touch of garlic and enjoy that extra layered effect of great flavors."

"This was a SUPER recipe and I happened to have fresh thyme from my garden. I did cut the heavy cream in half with 2% milk to cut down on the heavy side. I offered this to a friend whom never liked tuna and now she can't wait when I have extra to share with her. It's very generous of Emeril to offer up his blend of spices (Creole to make on our own, hats off to him.
I just served this as a side dish at my Thanksgiving table and was touted by all whom tasted it including a vegetarian member of my family. The full dish is more than 2 people can handle but believe me you'll make extra friends by offering them some.

Reviewed Pan-Fried Catfish Sandwich with Chipotle-Lime Slaw
"I'm a new cook and actually made cole slaw for the 1st time even getting a compliment from my wife. I passed this recipe onto friends as it was so good. Now I used a Corona beer but still mixed well with the mustard. Was a little hot batter but very good.
I did have an issue of seeing "Easy Level" as it was more involved for me. I also could have halfed the amount of flour and panko bread crumbs for my 1lb. whole catfish filet (I did seperate into 4 pieces.
The sandwich part on good rolls made terrific sense and all together this was a big hit here.
About Me
I've learned late in life how to prepare food and have good nutrition. I regret not starting earlier and hope I honor my Mother and Grandmother whom prepared delicious meals for us.
