Reviewed Seared Salmon with Confetti Chickpeas

"This recipe was excellent. It was easy to prepare and made a lot of food. The salmon turned out perfect, crispy on top and juicy inside. The chickpeas and all veggies went very well with the salmon. This is a keeper! I highly recommend this recipe - and it is easy to prepare and clean up! (I used a broiling pan sprayed with canola oil for the oven portion of the salmon).

"Excellent dish and very easy. I served with a side of couscous in which I added toasted pine nuts, as well as sauteed green onions and garlic. Yum!

Reviewed Chunky Guacamole

"As far as this recipe is written, there are WAY too many limes. This ruined an entire batch of guacamole. I am sure with a reduction of limes, this would be much better - but ratings of a recipe are based on how they are presented, not 'how they could be'. So, I will try this again, cutting the lime amount to 2 (adding one at a time) and see. Otherwise, this seemed fine.

Reviewed Stuffed Chicken Divan with a Sherry Dijon Sauce

"I thought this dish was incredible. I did substitute swiss for the cheese, cooked the broccoli a bit longer. Also, I pounded the breast thin and rolled the stuffing up in the breast and closed with toothpicks. Very rich taste. I do think the sauce was a bit runny, but overall? EXCELLENT!

About Me

Busy, like everyone else - but I am getting into cooking. Or something around those lines as I am self teaching. Funny how stressed I get during preparation, but find it to be very stress relieving. Sounds a bit paradoxical, but it works.

Favorite Foods

My favourite dishes to cook are Mediterranean / Middle Eastern cuisine. Items that are not most readily available in my city. I do not eat mammals, so I focus on poultry, fowl and seafood/fresh water fish rarely.

I do make a great spaghetti and meatball dish which is my modified version of a Food Network recipe.
