Reviewed Foolproof Standing Rib Roast

"WOW, My wife was skeptical but we followed the directions to a tea and the entire 11.5 pound roast came out perfectly medium rare, including the end cuts. This is the only way to prepare a prime rib as far as I am concerned. The roast entered the oven with an internal temp of 49 degrees, after the first hour the internal temp was 71 degrees, after the 3 hours in the oven it had risen to 117 degrees, after the final hour of baking it was at 123 degrees when we took it out, covered it with foil and rested it for 20 minutes and the internal temp was 135 degrees at slicing time. PERFECT!!!!!!!!!!!!!!
