"AMAZING! But REALLY, peel the squash first! The skin is not good! Also, I toasted the chopped pecans in a pan for a few minutes to flavor them. Let the squash cool a little before tossing it with the blue cheese/pecans, or else the blue cheese will become all gooey and hard to serve. This is very rich and very delicious! ""

"I don't think the extra butter is necessary, the rendered bacon fat is enough to flavor the dish. I subbed 1/2 and 1/2 for coconut milk. Also, remove the bacon after cooking (I left in whole slices, then chopped after it cooked), then toss back in before serving to make sure it stays crispy. ""

"Loved this dish, but will make some adjustments next time. The zucchini doesn't need to cook for a full 20 minutes on the stovetop, it was overcooked by the time it came out of the oven. A good 5-10 minutes is enough. I will add a little cayenne next time for some bite!"

"I used some advice from the reviews and used chicken broth and a touch of coconut milk instead of water. It came out beautifully! Alternatively, I'd like to try it sometime sans potatoes and on top of rice. I'm not quite sure how well the potatoes belonged in the dish.
