When I made this I did have to clear room in my fridge. I basically double-bagged the turkey in big food safe plastic bags and poured in the brine. I placed the big bag'o'turkey in the pan and let it sit in the fridge. That way when it was done brineing I still had that big empty space in the fridge to let it sit uncovered with the crust.
