Excellent, I use vegetable oil throughout, and added a bunch of different veggies, red peppers, bok choy, snap peas and green beans. I microwaved broccolli and green beans for 3 minutes then added them in, they came out perfect not too done. Also use chicken breast instead of thighs because that's what I had. Delicious.

I used pumpkin spices since others said without it was bland. My husband is gluten sensitive so I used Pamela's gluten free ginger snaps. It was a hit everyone liked this version better than the traditional pumpkin pie.

This is my go to recipe when I have to make something for a pot luck. Always get a ton of compliments and it's so quick and easy. I have substituted red cabbage for radicchio when I couldn't find it. I've used other dried fruits, tastes just as good. My grocery store has organic baby kale which is tender and is perfect for this recipe."
