I like the components of this salad, but the bacon fat congeals into bacon grease rapidly. This is the reason I only gave it two stars. If I use the dressing again, I will need to put it in the microwave so that I am not pouring bacon grease on my salad. I also found the dressing too vinegary. Based on others' reviews, I am attempting this recipe. I want to know, however, what I am supposed to do with all the left over oil. Can one reuse it? Should it go to a recycling center when I am finished with it? Chefs rarely give this kind of practical, necessary tip.
