"My family really liked this recipe. My 7 yr old stepdaughter helped with coating the chicken so she thought this was a fun recipe. My tweaks for what I had on hand were: minced garlic from a jar, dried basil, and fired roasted diced tomatoes. I think it still came out great! My stepdaughter doesn't like red sauce so she picked it off but still loved the juicy chicken. My husband was excited to take the left overs for lunch tomorrow. Very good! Will make this one again."

"I wish I could give this more than 5 stars. Best asparagus I've ever had! The nutmeg and lemon really amped up the flavor. I used ground nutmeg and concentrated lemon juice and I still thought it was yum. I'm going to use this recipe when I roast broccoli next time. Great hit with the fam!
About Me
I'm happily married to a wonderful man and I have a 8 year old step daughter plus a newborn baby boy. I stay at home with my kids and often times have nothing to do. I love food and will eat about anything. However, my entire family is incredibly picky. Drives me crazy! I have to deal with lactose intolerance, a step-daughter who lives off fast food and junk at her mother's house and just family who doesn't know what they're missing out on. I love cooking to see what new favorites my family likes and to give us time as a family at the table. We are on a limited budget so I have to make due with what we have sometimes. I've only been married less than a year but I have learned to be resourceful when it comes to the kitchen. I still have a long way to go but I've enjoyed going from burning chicken and living off tuna helper to making healthy and tasty meals that I'm proud to serve my family.
Favorite Foods
I am half hispanic so I love Mexican food but my husband and daughter unfotunately don't. I also love Italian food. I love the creamy sauces, pastas, cheeses, fresh ingredients and flavor.One of my top favs would be seafood. I grew up in Texas then moved to Missouri so it's hard to find good fresh seafood. My favorite restaurants would be Murray's in Columbia, Buca di Peppo, Panera any place that has awesome seafood and hole in the wall places.
