You can always trust Emeril! After looking at lots of on-line recipes for this dish, I decided to try this one. In the past I've never really cared for Egg Fu Yung but I "grew" a bunch of bean sprouts and needed to find a use. Don't add any extra seasoning that has salt.......the broth and soy sauce have plenty! We really liked this at our house....

Yum! Made this last night and will make it again and again. I used 3 blistered, pealed and seeded poblanos. For whatever reason.....they were picante. Generally they are mild. Not to worry, if you live in Texas.......picante is muy bueno!
