First they were delicious! I brought them to a dinner and everyone loved them. I had some maple bacon. It wasn't thick cut, so I cooked it whole, and then chopped it, and used 6 slices. Very good. Excellent topping. The filling could use a bit more sweetness...I never say this about desserts. Used fresh rhubarb and strawberries which created a lot of liquid, so next time I'll use more thickener."

Really good. Chop the ginger very fine. Use high quality dark chocolate. Let it sit for a day to soften the ginger and let the flavors merge. Very rich chocolate taste with a spice background. My only issue was too much butter in the crust. I'll try it with less next time.
