".I've done this four times, came out perfect each time. others have stated not done in the middle. I did not experience that.. maybe reason why?? 1) I used 9inch diameter spring form pan2) I had all ingredients at room temp..3) as I 300 degreed grahams I had tea pot heating water for water bath.
