This was easy and delicious! The only thing I changed was cutting down the chili sauce (I used siracha) by 1/4 because I knew this would be a bit spicy for me as I like things Medium spicy. Fantastic, definitely going in rotation.

slewis0054, it sounds like you may have used mexican style chorizo. it's fresh and very greasy and mushy (sometimes). spanish chorizo is already cured and would not be "mushy". sometimes when looking for the spanish type it is spelled chourico.
