We can hardly wait for fresh corn to make this. You can also add a little lime zest. I use yellow corn to give it a little more color.

Great recipe. Had to add cut up olives for the grand daughter...also spread a little marina sauce on the tortilla. We are lucky to live in the Puget Sound area where we have a store, Central Market, that bakes fresh tortillas. I will never buy the cardboard tortillas again. Not sure what Mexican sauce is, so I used enchilada sauce. Just discovered...

This recipe has become a staple. If we are going to a potluck, then we can make it a day ahead. I also make extra dressing because the rice tends to absorb the liquid and you can add more dressing later. We also cut up and add the tomatoes just before serving.
