A great brine is buttermilk with some chopped onion in it and maybe a little sriacha. It doesn't make the meat spicy if you just use a little bit, ut it makes it moist, and has a nice flavor. Another easy brine is heavily salted water (with kosher salt) and peppercorns, and onions if you want.
