My Activity

Reviewed Fastest Ever Chicken Enchiladas

"I actually used boiled chicken. I boiled it in 3 cups of chicken stock with oregano and onion for 10 minutes before shredding. I added a little cumin and chili powder to the mixture and I also added spinach and corn. I topped it with green salsa and it was sooooooo yummy!!! My entire family loved it incuding my 2 year old and 5 year old.""

Reviewed Oven-Roasted Potatoes

"I thought they turned out okay. I had to cook them an extra 15 minutes and ended up turning up the heat to 400 to get the browned. I guess my potatoes were big... I added kosher salt and they were just okay.... I think next time I will cut them into smaller pieces.""

Reviewed Spicy Baked Chickpeas

"Yum. I made it exactly as Claire recommended and they were delish. I made a batch and my 1 1/2 year old and 5 year old ate most of them. I think adding garlic powder would be a nice touch too. I will make these again and again."

Reviewed Roasted Brussels Sprouts

"Delish!!! I don't ever eat brussel sprouts but my 4 year old asked for them at the grocery store. I made this recipe and will make it again and again. I only cooked it for 30 minutes since I sliced each sprout pretty thin. They were sweet and crunchy and we couldn't stop eating them!!!

Reviewed Fleur De Sel Caramels

"wow, these caramels are the BEST I've ever had and I have tasted many.... yummm!!!! The only thing I have to say is that it took every over 30 minutes of boiling to reach 250 and reach the hard ball stage... we were worried about burning it and brought it up to temp slowly. It was so worth it even though it was a big project!! I tripled the recipe and have caramels to share and to eat!!!
